Easy Coconut Cake

I should have taken a picture before we had cut the cake!
 
We were really in the mood for a coconut cake the other night. Since we were in the middle of a blizzard and a trip to the store was out of the question, I googled recipes until i found one i had all the ingredients for!
 
This is a super yummy recipe that is quick and easy :)
 
Easy Coconut Cake
 
For the Cake:
1 box of yellow cake mix
2/3 cup of coconut
 
Prepare cake batter according to package instructions. Add 2/3 cup coconut to the batter before pouring into pan. Bake according to package instructions. Let cake cool completely.
 
For the Frosting:
1 box of vanilla pudding
1/2 cup of confectionery sugar
1 cup of milk
1 tub of cool whip
Coconut to sprinkle on top
 
Combine all Four ingredients with a mixer. Ice the cake as you would a normal cake. Top with  coconut.
 
I used sugar free vanilla pudding and sugar free cool whip because that's all we had. Next time i will defiantly at least use regular cool whip to make the frosting a bit thicker.

  1. Hi, I just made a coconut cake with a white cake mix, and added 1 cup flaked coconut to it. I used a tub of frosting, instead of making some. I think that it is funny that we both did this. The cake is all gone, everyone liked it.
